Chicken Yet-Ca-Mein With Crisp Vegetables

  • 1Tbsp. vegetable oil
  • 1 garlic clove, finely chopped
  • 1 tsp. (5 mL) fresh ginger root, finely chopped
  • 2 green onions, chopped
  • 1/2 lb. (250 g) skinless chicken breasts cut into pieces
  • 1/2 red pepper, sliced thinly
  • 1 carrot, sliced thinly on the diagonal
  • 1 cup (250 mL) broccoli florets
  • 1 cup (250 mL) chicken stock
  • 1 cup (250 mL) snow peas, strings and ends removed
  • 7 oz. (200 g) Yet-Ca-Mein noodles or Chinese noodles, cooked to "al dente" 
  • 1/2 cup (125 mL) VH® Cooking Sauce (Honey Garlic, Garlic, Sweet & Sour, Teriyaki or Pineapple)

  1. In a wok or a large non-stick skillet, heat oil on medium-high heat and briefly saute garlic, ginger and green onions.

  2. Add chicken & stir-fry on high 2-4 minutes.

  3. Add all vegetables except snow peas. Cook for another 3 minutes.

  4. Add chicken stock and reduce for 2 minutes.

  5. Add snow peas and noodles to the wok or skillet.

  6. Stir in VH® Cooking Sauce.

  7. Cook approximately 6 minutes and serve hot.
