Plum Maple Pork Chops

  • 1 tsp (5 mL) vegetable Oil
  • 4 bone in pork loin chops (about 1 1/2 lbs/750 g), or 1 1/4 lbs/625 g boneless chops
  • 1 small onion, halved and sliced
  • 1/2 cup (125 mL) VH® Plum Dipping Sauce
  • 1/4 cup (60 mL) maple syrup
  • 1 tbsp (15 mL) Dijon or whole grain mustard
  • 2 lbs Spartan apples, thinly sliced

  1. Heat oil in a large nonstick pan over medium-high heat. Cook chops, about 1 minute per side, until lightly browned. Remove and set aside.

  2. Sliver onion adding to unclean pan as you slice stirring, until soft. Stir in plum sauce, maple syrup and mustard.

  3. Return chops to pan, coating well with sauce, reduce heat to medium-low. Wash and slice unpeeled apples and arrange over chops. Cover and simmer 5 minutes. Serve with whole wheat couscous and green beans.
