A large and diverse country, the food of China can be very different from region to region. Chinese cuisine often blends sweet, sour, bitter, spicy and salty flavours. By carefully cutting ingredients into bite-sized pieces, dishes can be cooked quickly in a wok. Explore these different regions for some flavourful inspiration.
Northern China
Sometimes called Mandarin cuisine, the dishes of the northern region have been influenced by the Imperial Court of China and Mongolia. The dishes are typically lightly spiced and usually include noodles, dumplings or pancakes instead of rice. Common ingredients include lamb, peppers, cilantro, onion, ginger and garlic.

Eastern China
In the 19th century, Shanghai was China's major point of contact with European countries – this contact is reflected in its cuisine. Dairy occasionally appears in Eastern recipes and meats are often slow-cooked. The east, surrounded by fertile land uses more vegetables than other regions, often blending 6 or more vegetables in a single dish. Flavours that dominate are wine, soy sauce, vinegar and sugar.

Southern China
The cuisine of Southern China embraces the freshness of the ingredients available. Rice, vegetables, fruit, fish and shellfish dominate Cantonese dishes which are most often stir-fried quickly in oil. Sauces like Sweet & Sour, Soy and Hoisin are added at the end of cooking and quickly brought to a boil before serving.

Western China
The fiery west includes Hunan and Szechuan provinces. Although Hunan dishes are typically more sweet and sour, both provinces are know for their spicy cuisine that is often seasoned with ginger, vinegar, garlic, green onions and hot chilies. The spicy dishes often seem fiery at first, but once the heat passes reveal flavours that are savoured. Common ingredients include rice, mushrooms, and fresh or dried fish and meat.
